The 'typical' fatty acids are Table 2 of Bederska-Lojewska et al. 2021 (Molecules 26(24):7446, open access), raspberry seed recovered from juice pomace (Hortex, Skrzynsko, Poland, 2020) and extracted with ethanol under low-temperature sonication: palmitic 2.31, stearic 0.76, oleic 10.99, linoleic 52.59, arachidic 0.26, alpha-linolenic 31.10 %, total 98.01 %. Myristic, palmitoleic, C18:3 n-6, C20:1, C22:1 and C20:4 n-6 were all reported as zero in that oil. Table 1 of the same paper: 16.20 % oil in dry seed, acid value 4.14 mg KOH/g, peroxide value 8.45 meq O2/kg. Min/max additionally span Oomah et al. 2000 (Food Chemistry 69(2):187-193; palmitic 2.7, oleic 12.0, linoleic 54.5, alpha-linolenic 29.1 %) and Ispiryan et al. 2023 (Plants 12(14):2706, cv. 'Polka', hexane / cold press / supercritical CO2 / subcritical CO2; palmitic 1.8-2.1, oleic 10.2-10.6, linoleic 44.0-44.8, alpha-linolenic 37.2-38.1 %). Note how far the linoleic-to-linolenic split moves between studies - 54.5/29.1 in the Canadian material, about 44/38 in the Lithuanian 'Polka' - while the sum of the two stays near 83 %. A maker judging rancidity risk should treat the pair as one very unsaturated block rather than trust either figure to a decimal. SAPONIFICATION: the only measured value in an allowed primary document is Oomah et al. 2000, saponification number 191 mg KOH/g, on an oil of 10.7 % seed yield with peroxide value 8.25 meq/kg and 2.7 % free fatty acids. Only that paper's abstract is readable (Elsevier paywall); it was read through the Europe PMC bibliographic record cited below and it prints no iodine value. The min 175 is the lower bound of the cold-pressed raspberry-oil row in the systematic review of Dash et al. 2026 (Front. Nutr., Table 1: SV 175-190 mg KOH/g, IV 150-180 g I2/100 g, unsaponifiable 1.0-3.0 % w/w, specific gravity 0.920-0.935, FFA 0.8-3.0 %, PV < 10 meq O2/kg). Those are compiled review figures, not measurements, and they are quoted here only because iodineValue and unsaponifiablePercent have no measured source at all in the documents opened - both fields carry that review band and nothing else. For orientation, the recorded composition implies an iodine value near 181 by the usual per-acid factors, at the very top of the review's band, and a saponification value near 192 by stoichiometry, within 1 % of Oomah's measured 191. Ispiryan et al. measured refractive index 1.4829-1.4835 and density 0.9258-0.9366 g/cm3 at 20 C but no saponification or iodine value; the review of red raspberry seed oil in Plants 10(5):944 (2021) prints neither, only acid values of 17.18-18.74 mg KOH/g attributed to Oomah 2000 and Dimic 2012. Melting point not reported (liquid oil). INCI not verified against CosIng in this session, so left null.
