Table 1 physicochemical parameters per variety DN1-DN10 (yield, pigments, FFA, peroxide value, saponification value, iodine value, K232, K270); Table 2 fatty-acid composition of the ten varieties with SFA/MUFA/PUFA subtotals. Both tables were read from the rendered PDF pages because the text layer scrambles the right-hand columns.

Tunisian cultivars Deglet Nour and Allig; cited in notes to show cultivar variation in lauric acid, not used in the fields.

Every field is from Halabi et al. 2023 (J. Microbiol. Biotech. Food Sci. 12(4):e5725, open access): ten Moroccan date varieties - Mejhoul, Lkhalt, Boufkouss, Iklan, Bouslikhen, Bousthammi, Ablouh, Jihel, Aziza and Lkenz (DN1-DN10) - seed oil Soxhlet-extracted with an apolar solvent, FAMEs by GC (EEC 2568/91), results as % of all fatty acids detected. Min/max are the lowest and highest variety in Table 2: caprylic 0.02-0.35, capric 0.03-0.45, lauric 15.62-23.00, myristic 8.63-12.70, palmitic 9.37-10.95, stearic 3.30-4.21, arachidic 0.37-0.64, palmitoleic 0.07-0.16, oleic 42.13-52.60, eicosenoic 0.28-0.49, linoleic 5.76-9.27, linolenic 0.03-0.11 % (no linolenic value printed for Mejhoul). Margaric (C17:0, 0.05-0.09 %; Bousthammi's printed as '0..05') and margaroleic (C17:1, 0.03-0.05 %) have no key. The varieties' SFA + MUFA + PUFA subtotals add to 99.5-100.0 %, except Lkenz at 97.3 %. Table 1, per variety DN1-DN10: saponification value 222.08, 222.81, 220.99, 218.54, 216.21, 225.59, 225.45, 223.79, 221.56, 214.85 mg KOH/g; iodine value 56.66, 54.12, 57.87, 59.76, 60.59, 48.84, 50.30, 50.87, 55.89, 57.68 g I2/100 g; oil yield 2.94-8.06 %; free fatty acids 1.10-2.54 %; peroxide value 3.88-6.33 meq O2/kg. Both tables were read from the rendered PDF pages because the text layer scrambles the last five columns. A CAUTION ON THE SAPONIFICATION BAND: variety by variety, the fatty-acid composition implies 204-211 mg KOH/g by stoichiometry, and the published values sit 5.9-7.1 % above that for nine varieties (3.9 % for Lkenz). The offset is consistent, which points to the method rather than the oil, and 1-2.5 % free fatty acids explain only a fraction of a percent of it. It stays inside the 12 % the validator tolerates, so the published band is stored, but a maker who calculates with its midpoint (220) uses about 6 % more lye than the composition supports: keep the superfat generous or ask for a certificate. CULTIVAR MATTERS FOR LAURIC ACID: PlantFAdb tabulates Besbes et al. 2004 ('Date seeds: chemical composition and characteristic profiles of the lipid fraction', Tunisia) with Deglet Nour at lauric 17.8, myristic 9.84, oleic 41.3, linoleic 12.2 % but Allig at only 5.81 % lauric, 47.7 % oleic and 21.0 % linoleic, so these Moroccan ranges do not cover every date. FOR SOAP: roughly a third of this oil is lauric plus myristic acid, so it cleanses and lathers more than an ordinary seed oil, with oleic making up most of the rest and very little polyunsaturation (about 6-9 %), which gives it good shelf life. Unsaponifiable matter and melting point were not measured. INCI 'Phoenix Dactylifera Seed Oil' is an active CosIng entry with no CAS or EC number.
